Enjoy this delicious fresh salad loaded with berries and packed with nutrient rich greens. This salad features radish microgreens. They provide vital nutrients in abundance, including proteins, essential amino acids, vitamins, polyunsaturated fats, fiber, minerals, and antioxidants. I love them for that, but also for the colour and flavour they bring to the salad. And of course blackberries are loaded with antioxidants and vitamins.
In a bowl, combine olive oil, red wine vinegar, mint, garlic, chopped olives and a pinch of salt. Place in refrigerator until ready to serve.
Trim ends off of asparagus. Lightly coat spears with olive oil and cook on medium heat over grill pan until seared. Sprinkle lightly with salt and pepper.
Cut asparagus into small pieces. Assemble the salad by combining all ingredients with the microgreens and dressing. Toss well and serve. ENJOY!
